I often make these easy oatmeal cookies, in fact they're so easy I don't really measure anything and I tend to vary the ingredients yet they still turn out fine.
I made them yesterday afternoon with a new twist: butterscotch chips with vanilla and cinnamon for extra layers of flavour.
|I buy organic large flake oats.|
The eggs are also organic, I use two for a little extra protein.

1/2 cup butter, softened
1/2 cup brown sugar
1 tsp pure vanilla extract
Mix well and then add:
1 cup all-purpose flour
1 tsp baking powder
small dash of salt
1 and 1/2 cups large flake oats
1 cup chocolate chips or butterscotch chips
(if using butterscotch add in 1 tsp of cinnamon)
Mix well, plop on your lined cookie sheet and bake for 10 minutes at 350.

I try to measure them out the same size but that is not a skill of mine.

Before my son left for University these would be gone by 4pm, these days they last until about 8pm.
