Fool For Breakfast

Breakfast
Lately I've been craving fruit and cream combinations like this raspberry fool inspired concoction.
  I can't even call it a recipe, it's just some thawed frozen raspberries with a teaspoon of sugar stirred in, topped with a cream and greek yoghurt mixture and a few toasted almonds.
Toasting almonds is the most difficult part: watch the pan!
 I also love it made with some dried apricots.
I boil down two packets of apricots with water, maybe 2 teaspoons of sugar and some cardamom pods. It only takes a half hour or so and it's the kind of cooking that's so nice this time of year: leave it simmering on the stove and the entire house will be fragrant with apricots and cardamom.

The only trick is with the cream.  I whisk some heavy cream to soft peaks and then plop in some plain greek yoghurt and whisk some more.  It gives the whole dish more substance and protein, plus there's yoghurt in there so we can get away with having it for breakfast.
 I don't tell the Rascals about the yoghurt, let them think they're eating cream.
The thick cream and yoghurt is a luscious counterpart to the fruit and the almonds, only slightly toasted, add that nice crunch.

  1. Sounds and looks delicious,Dani. I have a lot of Greek yoghurt with fruit at all times of the day. For breakfast, I love simply boiled eggs and some rye toast or soda bread for breakfast. But only if I make it myself. It fills me up and stops me snuffling for chocolate 5 minutes later. A bacon sandwich is never refused either - in fact it's a must on the weekends in my house.

  2. My favorite breakfast is greek yogurt with honey and roasted` walnuts.
    It is actually more dessert than breakfast:)

  3. YUM! Sounds alot like what I eat for breakfast, except mine is premade. Fage greek yogurt is unlike any other brand - it tastes like it is cream, not yogurt! It has a little sidecar type thing with cherry preserves in it. The most delicious thing ever, tastes like a decadent dessert! I must try topping it with almonds now!

  4. I am a creature of habit and have the same breakfast every day - whole grain toast with peanut butter, a hard boiled egg, a cup each of strawberries and blueberries, orange juice and coffee. I bring yogurt and nuts to work for a mid morning snack. I agree about Fage yogurt, it's my favorite!

    I like the idea of mixing cream and yogurt, Dani. My husband is nuts for apricots, I'm going to try tempting him to eat breakfast. Thanks for the suggestion.

  5. I've recwntly discovered cottage cheese with berries: blueberries or boysenberries. The berries add sweetness to the saltiness of the cheese. Deelish!

    1. Hi maqsad, I can't eat that cottage cheese, it's one of those foods for me, I just don't like it. But you know it's high in calcium which is so good for us, that sounds quite healthy.

  7. That looks delicious Dani. Beautiful presentation too. I'm with J.CrewJD on the Fage Greek yogurt. I buy the 0% fat in the large size container to use for breakfast and those times when I want to decrease the amount of sour cream in a recipe. For breakfast I add fresh berries, almonds and a sprinkle of granola and it satisfies my sweet tooth ....mostly...I must admit that I will never refuse a decadent pastry on Sunday mornings!

  8. I changed my breakfast to the full Fat Fage a few months ago for a change ( even though I eat it for lunch too, I just love the stuff) but I'm going to have to change again, even with nuts, Iam starving after an hour, I really need more carbs to feel full.

  9. We love waffles at our house. I use a buttermilk waffle recipe and add chopped nuts (pecans or walnuts) and fresh blueberries (you could use frozen) to the batter.

  10. MORNING MIX I have to force myself to eat breakfast. Generally I prefer savoury PB/ almond butter things and oatmeal to "fools". Although those are a big "almost dessert" (DH's moniker) in my house. My go-to non-weekend "fancy breakfast" is usually a corn tortilla with a dry-scrambled egg and some tomatoes, hot sauce, avocado, leftover herbs, maybe a bit of cheese. Occasionally a farm boiled egg with rye toast "soldiers".
    Dani, have you ever tried real Martha's breakfast "cookies", or similar, for the rascals? Highly recommend. Recipe is flexible and you can vary/ omit the nuts, seeds, dried fruit based on pantry, personal preferences, mix in flax etc.

    1. GF I have tried the breakfast cookies and the rascals aren't having any of it. I have a very hard time feeding them in the morning. When I was growing up we had boxes of cocoa puffs and captain crunch on the table and that was it! I've created fuss-pots.

    2. I also had very hard time to eat in the morning GetFresh... I took the habit of having, first thing in the morning a cup of warm water with a tea spoon of honey and sometimes lemon in it... Then I have my shower and then I can eat. Breakfast is tricky I agree! I have very limited time to prepare breakfast (I already wake up at 5:45 and find it early enough! but then I must confess that I have a terrible organisation) We usually have cereals with milk or yoghourt or just bread with butter and jam/honey/whatever and some fresh fruit, most of the time apple or pear... Nothing really fancy...
      I have been juicing every evening or nearly for the past months and I try to do some extra so I can have some in the morning too...

    3. FunkySteph, the water with lemon is so healthy, one thing I do is to have water with a bit of lemon in it, one large glass, before my coffee. This is supposed to set hydration on course for the day, coffee on an empty stomach=not so good.

  11. I wake up starving. My hubs makes breakfast every morning for us..and he even does the short order cook thing - scrambled eggs for him, 1 fried egg OM for me, and PB toast for daughter. The egg lets me make it 5-6 hours with out getting faint. He's a good man.

    2. BB lucky! That's a good husband right there. I try to get MrBP to make breakfast sometimes but he is scarce in the mornings, either working or at the gym, weekends too! I need to get those rascals on short order cook detail!

  12. Dani, your yogurt and cream mix sounds yummy! I have Greek yogurt with ground flax seeds and frozen blueberries. I also love a breakfast of rolls, cheese and ham - we used to do that on our skiing holidays in Austria, the bread rolls in Austria and Germany are delicious!

  13. Hi Dani-Your fool looks delish, and such beautiful presentation! I love to cook breakfast, but only when I'm not hurried, so I'm no help. When my boys were teenagers,(I was working then and money was pretty tight), I usually made a skillet of scrambled eggs with different cheeses and they'd guzzle big glasses of milk and Hershey's syrup before they hit the door. My absolute favorite breakfast goodie is a sour cream pound cake heavily laced with cinnamon ,brown sugar and toasted pecans, a Southern Living recipe. It is very similar to one that they serve at the Del Coronado Hotel breakfast buffet. Lordy, I wish I was eating breakfast there this morning!

  14. I am a wretch at breakfast. I really only seem to fuss about dinner! It is every man for himself, now that kids are grown up, but Barry will still often make an egg breakfast for all. I switch up all the time, this looks good, though I would have to pass on the almonds - the cream, greek yogurt would be nice! I tend to not eat a lot at breakfast, a small toast or yogurt and berries or maybe cereal. I drink a tiny bit of OJ and then have a teeny cup of espresso made by Barry each morning. I really must be more adventurous!

    1. WMM I wish it were every man for himself, that's me on the weekends generally though I always feel guilty if I'm not churning out the meals. I like to have coffee while sitting up in bed I think that's the best situation!

  15. One of my go-to breakfasts is oven baked oatmeal. 2 cups oatneal, 2 cups milk, raspberries, a couple of grated apples, a bit of vanilla and then the special part, a touch of maple syrup. Mix it all up and pop it in the oven for an hour. I do one up Sunday night and reheat the next few mornings. I love oatmeal but hate the mushiness; this dish solves that. And it is a bit dessert-like too!

  16. It looks wonderful. I love almonds and they're so good for us. Hadn't thought of putting it on yogurt though. My breakfast is usually gallons of tea followed by yogurt and organic Blueberries. My yogurt of choice is called "Siggi's". It's Icelandic style yogurt, sweetened with agave nectar and has a whopping 14 grams of protein in each small container.
    BTW- I hadn't noticed your picture before. You are beautiful.

  17. That looks tasty!

    On weekdays I eat a protein shake - frozen berries, some milk (100mL), sometimes some frozen spinach, a bit of peanut butter, some water, and chocolate protein powder. It keeps me satiated for quite a while.

    On weekends it's either the same, or some sort of delicious egg and bacon and potato meal, made by my husband.

  18. Protein shake - water, protein powder, Stevia and frozen berries. Every single day. I'm not a breakfast eater, so this is easy for me and very filling. I make something similar to your breakfast to keep around for dessert though after dinner.

  19. Canadians do have their own Nature's Path company-- all organic and no GMO. I have a mix of the Smart bran and Heritage flakes with raisins, milk and our own hony many days. I sometimes have a blenderized mix of frozen raspberries, vanilla yogurt, bit of whey powder, and unsweetened cocoa, a little water if too thick, oat bran if you want more fiber. This is awesome ( think of all the lovely rasp/choc desserts).

  20. We eat a lot of avocado smashed on some sort of good whole grain bread that's been toasted. Top the smashed avocado with flakes of maldon salt, and if you like spicy, some red pepper flakes. Sometimes with an egg too. I also often make a smoothie for myself on weekdays in case I don't get lunch til late: similar to Kathy, I make it with frozen berries and protein powder and water and usually a frozen banana and ground flaxseed too.

  21. Sure does look yummy! It's funny how our bodies crave certain foods.I have been on a French onion soup kick lately,can't get enough. Made a big batch Sunday and its gone already!Those raspberries look great with the nuts and cream. I have been noticing more berries at the market this week,lots of blueberries.Spring must be on the way.Ihave been having English muffins with peanut butter and a bowl of fruit on the side . Of course I can't start my morning without my coffee!!!

  22. What a great idea for breakfast, it almost seems like a dessert - it is so difficult to get the kids to eat anything at breakfast time and something like this might work. I bought some PC brand Greek yogurt from Loblaws a few months ago, and loved it. Thanks for sharing the recipe!

  23. I don't usually eat breakfast, I eat dinner for lunch. ;) When I travel, my favorite on the breakfast flights is the yogurt parfait. This must be something like that, looks yummy. Just learned about Fage with everyone's comments, must look for it to try.

    I actually love oatmeal for breakfast, not instant or quick cook, but the real thing.
