Colcannon

 These days I'm craving simple, humble foods.  Plain vegetables set off by good things like butter and cream.  Colcannon is one of my most favourite dishes to make for our dinner on a weeknight, it is super easy to throw together and it keeps warm in the oven for certain people (MrBP) who might be working late and missing our 6:30 family dinner.
You can see an excellent recipe for Colcannon right here, it's basically the one I follow though of course I have to add a layer of cheese at the end before I give it a good bubbly finish in the oven.
Boil your taters.

I drain and then add in the raw kale.
You could also saute the kale before adding the taters back in.

Mash in lots of butter and some cream.

Looking mashy!

You'll want to chop up some nice fresh scallions.

I mix mine with some grated old cheddar cheese, giving it a slight stir.

FInish in the oven until a little golden and delicious smelling.
This is an excellent method of getting kale into youngsters.
